Today is Tuesday so today we cook….
Nothing better for you than a healthy start to the day so how does this one sound….?
Avocado, Eggs and Ham….?
Now bear with me guys because it is super tasty, super healthy and super easy to make and if you want to reduce your morning carbs then this is the ideal one for you.
- 2 Eggs.
- Ham Hock – shredded.
Split the Avocado in half, remove the nut then place in a baking tray.
Chop off a thin slice of the underside so that each half sits securely in the baking tray.
Scoop out a little of the Avocado centre to make room for the Egg.
Put this to one side.
Leaving the scooped out Avocado ready to take the Egg.
Crack the Egg into the hollow of the Avocado then season with Pepper.
And then Salt.
Take the Shredded Ham Hock and sprinkle over the top of the Avocado and Eggs.
Putting back the flesh already removed.
Place in the oven for about 15 minutes, then remove when golden brown and a little crusty.
Serve in a plain bowl.
How simple was that guys?
