Tasty Tuesday… Avo ‘N Eggs

Good Morning world and thanks for tuning in to another shiny day here on Planet Magnet.

Today is Tuesday so today we cook….

Nothing better for you than a healthy start to the day so how does this one sound….?

Avocado, Eggs and Ham….?

Now bear with me guys because it is super tasty, super healthy and super easy to make and if you want to reduce your morning carbs then this is the ideal one for you.

Ingredients:

  1. Avocado.
  2. 2 Eggs.
  3. Ham Hock – shredded.
  4. Salt.
  5. Pepper.

Split the Avocado in half, remove the nut then place in a baking tray.

Chop off a thin slice of the underside so that each half sits securely in the baking tray.

Scoop out a little of the Avocado centre to make room for the Egg.

Put this to one side.

Leaving the scooped out Avocado ready to take the Egg.

Crack the Egg into the hollow of the Avocado then season with Pepper.

And then Salt.

Take the Shredded Ham Hock and sprinkle over the top of the Avocado and Eggs.

Putting back the flesh already removed.

Place in the oven for about 15 minutes, then remove when golden brown and a little crusty.

Serve in a plain bowl.

Eh, Voila!!

How simple was that guys?

    This looks really good with ham. I tried this with just eggs in avocado and I did not like it. I LOVE eggs, and I LOVE avocado, so I thought it would be a sure win. Nope. I think it was the taste of the baked avocado. I don’t know. However, if I do try it again, I will def try it your way. I think another flavor, like ham, is what was needed 🙂

    I am in search of meal replacements. Is this recipe a good alternative to coffee ice cream with hot fudge, walnuts in syrup, reeses peanut butter cups, chocolate morsels, chocolate sprinkles, whip cream and a maraschino cherry?

    I have never seen this preparation. It really is an excellent choice as a breakfast meal. Thank you for sharing and giving me another new recipe to try!

    Just saw a version of this on Facebook…LOL its beautiful to look at, but I have to pass…LOL maybe without the egg….and more ham and cheese for me….does the avocado get really soft and mushie???

      You can also cover it with grated cheese or the like, it simply depends on how rebellious you feel during preparation….. Obs’ just for you as if I am correct HB2 would in no way condone the melting of cheese on anything let alone an avocado…..
