It is also day five of my video a day challenge so I hope you like this latest video.
Once again I am cooking a recipe and showing just how EASY it is to eat healthily. There really is no need for anyone to always be buying cheap and cheerful processed foods when you can make a delicious dinner as I have done all for the price of a few vegetables and some chicken thigh fillets.
That’s right, the mighty Chicken thigh rides again and it really makes a difference to the meal. It is affordable, it is tasty, packed with protein, lean of fat and best of all as you will see in the video, really easy to cook.
So without further ado the Mighty Chicken Casserole.
Here is how I made it (or put it together – literally)
And here’s what it looked like being dished up…
Now get out in that kitchen and rattle those pots and pans. Well actually, chop some veg, take some thigh fillets out of the packet, put it all in the slow cooker and let the Crockpot take the strain…..

The only part I would leave out is the chicken! LOL! That looks really good.

Well, maybe I will have a little bit! I would cook it with the chicken and stock because my husband loves chicken thighs…and if it is nice and juicy as it sounds, I would try a bit. Are they boneless?

Yes, skinless and boneless fillets. Lovely and tasty and loads of soft meat on them…. Yum!

I’m not a chicken thigh girl, but imagine breast meat would also work. Great recipe and another great video!

To be fair, I reckon ANY cut would be okay, it’s just that some have more flavour and more juice than others…..

I hope your videos prove how easy it is to cook and prepare healthy meals without creating time restraints for other chores required during the day. These vids were a great idea.
How are you shooting the videos and then formatting them to embed on wordpress?

Thanks Jonathan. They were a breeze to make and a good chice I think because it shows just how EASY it is to do these things in real time. The videos were shot on my iPhone and then loaded to my iMac with iPhoto. All you do then is Add Media on WP and upload the video. Simples!!

Looks yum! I love chicken thighs. They’re delicious and more tasty than breasts, also cheaper, what’s not to like? I often just chuck them in the oven, along the lines of take some chicken thighs, some sweet potato chunks, broccoli chunks, chopped peppers, onions (I can only have green part, but you go for it), any other veg, add some spice or for extra yum mix yoghurt with your favourite curry paste drizzled over the top.

I cannot abide bones in anything so that is why I have the fillets and as for the skin, none for me after years of weaning myself off of it….!

Understandable…it’s definitely about personal tastes and preferences! I had to wean myself off of sodas and can barely stand them now – so I can relate, a little bit!

LOL – I make the skin nice and crispy, for sure! Amazing what can be done with a touch of olive oil, a little bit of butter, and water…but it takes some serious watching for it to turn out perfect!
