Tasty Tuesday – Life Is A Minestrone.

Good morning everyone and thanks for taking time to tune into the Worlds Biggest Fridge Magnet’s Tasty Tuesday post. Today we have a super healthy, very tasty and OH SO! easy to make Minestrone Soup with a little difference, it is poured over Chicken.

Different Hey?

I’ll say, but my word it is tasty, it is healthy and it is so easy to make, it has to be in all of our Recipe Arsenals.

So lets get to it shall we.


  1. 2 x Roasted Chicken Thigh Fillets.
  2. 2 x Bell Peppers.
  3. 1 x Medium Onion finely chopped.
  4. 1 x Handful Baby New Potatoes chopped.
  5. 2 x Leeks finely chopped.
  6. 2 x Slug’s of Olive Oil.
  7. 1 x 400gms Bag Of Soffritto.
  8. 1 x Handful Plain Pasta any variety.
  9. 2 x Large Garlic Cloves finely chopped.
  10. 1ltr Chicken Stock.


Firstly we need to get the chicken roasting so pop a slug of Olive Oil in the bottom of a roasting pan.


Add the Chicken Thigh Fillets and season with Salt and Pepper.

Cover with tinfoil and then pop in the middle of the oven.

Whilst the Chicken is roasting gently, it is time to prepare the Peppers, Leeks, Potatoes and Garlic.


The add some oil to a wok and start to heat it up.


Once hot, add the chopped onion.

Followed by the Leeks and Garlic Cloves.


Once the above ingredients have browned off, add the Soffritto to the pan and continue cooking.

Next take the prepared Potatoes and Peppers and get them ready to add to the mixture.


First though add the Chicken stock.


Then the Peppers and the Potatoes.


Letting it all simmer gently for about 40 minutes on a medium heat

Before adding the Pasta.


Leave the soup to cook on its own, taking care to monitor the Pasta for softness, then check on the Chicken Thigh Fillets you left roasting in the oven.


Once this chicken has been removed, let it rest for a few minutes and check on the soup which should by now be completely finished and looking like below with the Pasta cooked through.


Shred the chicken into the bottom of a preheated bowl.


Add the soup over the top of it, season to taste.


Eh, Voila!

Now what could be easier than that? Not extra calories anywhere, not bad fats and everything fresh and healthy.

What more could the body want! Healthy, hearty and easy.

    I love minestrone. My love for it borders on obsessional though I can honestly say I have never actually STALKED Mine-Strone. I have various recipes from the quickest easiest to the downright labour of love. But I had never ever thought of putting it over chicken. This will be rectified. Not tonight though – because tonight I am out for dinner 😉 Maybe at the weekend if this damned balmy weather abates and we get some chill in the air 😀

      Oooh! Get you! Thats with he whom shall be known as two brains?
      No such luck on the weather here though. It was mild today as I moved furniture at the farmhouse but this evening the wind has howled and the temperature dropped and I made the most of it with a steaming bowl of Mine Strone. Oooh Yum!
