I am feeling a trifle better so am able to offer a touch more for you to read today in the form of a wholesome recipe.
So for the second time since starting this Tasty Tuesday part of my blog, I am here to offer a tasty and healthy treat for you to make and make it you should because it is EASY!
So what do I have for you? What is healthy, hearty and filling yet sweet and offers a treat whilst giving a nice energy boost?
How does home made Granola sound?
Pretty good eh?
- 300gms Organic Rolled Oats finely chopped
- 300gms Chopped Dates
- 300gms Mixed Chopped Nuts – Hazelnut, Almond and Brazil
- 350gms Wholegrain Organic Peanut Butter – No added sugar
- 350gms Runny Honey
Measure out the Oats.
Pour into you food processor and blast for several seconds to chop the oats down a little finer.
Pour chopped Oats back into the mixing bowl.
Add the mixed Chopped Nuts
Measure out the 300gms of Dates
Put onto a chopping board and chop into smaller pieces. This is quite labour intensive but it is most definitely the best way to get dates that are sweet, small and useable.
Add the chopped Dates to the mixture and mix in well ensuring they are as separate as you can make them.
Put a pan of water on the hob and bring to the boil.
Measure out the Peanut Butter into a glass bowl.
Add the Runny Honey.
Then place the glass bowl into the pan of hot water (a makeshift bain-marie) and allow the heat to penetrate the glass making the mixture nice and soft.
Add this to the mixing bowl and stir in well.
Pour the contents of the mixing bowl into new bowl that has been chilling in fridge for an hour. Flatten out and return to the fridge.
Leave overnight to set, remove from fridge and then cut into smaller pieces.
Serve with a cup of tea.
So, as I spent most of the day in bed yesterday and ate only one Mini Muffin for the entire day, I figure there is little point in sharing my food or exercise diary because there really was none of either.
