Tasty Tuesday’s A Tex Mex Experience

Well, when I say Tex Mex I kind of mean more Fajita’s and when I say Fajita’s I really mean Fajita Quiche….. 😉

Healthy Healthy Healthy!

This is another recipe I have taken from my friend Saga Gardevärn, the lovely lady at Live Fit Die Yum and changed it a little to suit my palette but you are welcome to do the same.

So then, let me tell you a little more about the Fajita Quiche….


  1. 6 Eggs
  2. Cottage Cheese (190gms)
  3. 4 Garlic cloves
  4. Spinach (100gms)
  5. Chicken breast fillet (200gms) cooked and then diced
  6. 2 Bell Peppers Red/Green(250gms)
  7. 1 Onion (120gms)
  8. Fat reduced cheese (30gms)
  9. A splash of White Wine vinegar

And the following spices

1 tsp Chilli powder
1tsp Salt
1tsp Paprika
1tsp Caster Sugar
1 Chicken stock cube
1⁄4 tsp Cumin.


Firstly take the chicken pieces and place in a hot pan in order to brown off.


Whilst these brown, put the eggs in the bowl and beat into a consistent texture.


Chop the Bell Peppers into small pieces.


Add the Cottage Cheese to the Egg mixture.


Followed by adding the chopped Onion and Garlic along with the Peppers.

Mix this in well along with the Egg and the Cottage Cheese before crumbling the Chicken Stock cube in followed by the low fat Cheese, the Spinach and the Salt and Pepper seasoning.

Then add the various spices and Caster Sugar.

Follow this with a good slug of White Wine vinegar and then mix in once again.

Rub some Olive Oil around the baking dish to enable the quiche to release after cooking then place the pieces of chopped and browned chicken in the bottom of the dish.

Add the bowl of mixed ingredients to the dish and smooth out to a level surface.

Put into the oven on the middle shelf at about 180˚C for approximately 35 to 40 minutes or util firm in the middle and golden brown on top.

Cut into slices and serve.


And Eh, Voila!

Quiche in this variation per slice is about 135 Calories, 19gms Protein, 8gms Carbohydrate and 4gms Fat.

Looking at the figures you might be forgiven for thinking that I had had a bad day on Sunday but the high calories and the high fats come from the fact that there was Cashew nuts and Mackerel fillets on the menu, two very high calorie and high fat content foods although still very healthy with healthy fats and clean calories so all in all the day was actually quite good. Add this to the fact it also coincided with a 7 mile walk, I think we had any excess covered 😉

Yesterday was actually a rest day although I did manage a walk in the morning first thing even though it was raining…Archie and I set off in the rain and managed to get a fair walk going even in the foul weather covering over 4 miles. My Map My Walk should that we made good progress and telling me we were exercising for just under an hour and fifteen minutes.


So this walk added to my activity for the day put me at a total of nearly 17,000 steps for the day, once again smashing my daily target.


So all in all a good day for a rest day. Come back in the morning for a report on my next trip to the gym 🙂
