Well, maybe I should let you be the judge of that after trying this little belter of a recipe…
So what do I have for you today?
Well it’s a very simple dish, a very tasty dish and a dish designed to watch the pennies.
I have put my own spin on this recipe but the original was courtesy of Carol Bowen Ball of www.bariatriccookery.com so many thanks to Carol for the inspiration!
Spicy Chicken and Mozzarella Pizza:
- 1 x Wholemeal Tortilla
- 150gms Hot and Spicy Chicken Pieces
- 2 x Tablespoon’s Tomato Humous (about 40gms)
- 5 x Cherry Vine Tomatoes
- 1 x Green Pepper
- 5 x Chestnut Mushrooms
- 1 x Red Chilli
- 125gms Full Fat Mozzarella Cheese
- Parmesan Cheese to taste
- Parsley/Basil or similar herbs to garnish
- Cracked black pepper and sea salt, season to taste.
So how do you make it….?
Well it is so super simple, even I can make a FRESH pizza.
Take your spicy Chicken, chop into fine strips and cook it off in a pan. Slice the mushrooms and add to chicken allowing them to cook through.
Slice the green pepper, chop the chilli, slice the baby vine tomatoes and cut the mozzarella cheese into thin slices.
Lightly grease a baking tray or apply some grease proof paper to a standard metal tray. Take the tortilla and spread the tomato salsa evenly covering all of the base, bar the edges.
Add the other ingredients to the base creating your own individual pizza
Put at the top of a pre heated oven for 8-10 minutes at 195 degree’s centigrade (I am told this is about Gas Mark 6 ish?)
Check regularly and once cooked to your own specification (soft, crispy or charred 😉 )
Remove from the oven, garnish with a few herbs, season with the sea salt and black pepper and sprinkle on a fine scattering of Parmesan cheese then serve.
Eh Voila! Healthy Pizza in a Bariatric portion size.

After a rest day on Sunday and the fact I didn’t manage to go to the gym on Saturday, I was raring to go yesterday so after breakfast I collected the dog and went for good a walk followed by a trip to the gym.
The gym session was cut short and unfortunately looked like this:
- 3 x 15 Reps 30kg Abductor machine
- 3 x 15 Reps 30kg Adductor machine
- 3 x 20 Reps 30kg Abdominal Crunch machine
- 3 x 20 Reps 30kg Lower Back machine
I only did 10 minutes on the exercise bike and the stepping machine was forgotten completely.
The reason for this?
Well it appears that I went at the wrong time. On a Monday lunchtime (the time I got there) there is a circuits class in the main gym and unfortunately when there is a lot of activity around me, I still get very twitchy and anxious and I was only able to take it for about 25 minutes before I had to leave.
It is strange how since my surgery I am so much more confident in myself in certain things but still on occasion when there are too many people around me, I cannot handle it and have to get out. Hopefully this is just a simple minor setback to my ailment of anxiety attacks and not a return to form that I have experienced so much over the past 15 years or so.
Anyway, it was unfortunate and I have learnt that I cannot go at that time of the day on a Monday as I don’t want to be around all of those people. In future, I will make sure that I stick to my usual routine of going to the gym in the morning so there are no repeat performances.
